What’s Cookin’?

I am a 40-ish 😉 mom of 2 teenage boys and 1 tween girl.  I have an amazing partner and friend in my husband.  We live a very good life filled with love, support and good times.  We LOVE spicy foods (is it possible to have a Sriracha addiction?), insist on having veggies with every meal and encourage our kids to help in the kitchen.  I am a frugal gal-so most of our meals are whatever was on sale-which makes meal planning a bit of a challenge.

If you’re like me (and everyone I know….) you are likely struggling to answer the age-old question, ‘WHAT’S FOR DINNER??’.  Between working, being a mom, homework, sports, band, volunteering and barely keeping the house tidy; I am not proud to say that our local pizza joint and Chinese take-out restaurants know my phone number and can probbly correctly predict my order.  The one thing I AM proud of is that Greg (hubby) and I have stuck to our rule/policy that we sit down (at the table!) as a family to eat dinner every night.  We’ve banned phones/TV during our family time.  In order to uphold this policy with our chaotic world-which we do about 95% of the time-the variety of the meals and sometimes health content has become a bit of a struggle.

Full disclosure:  I am not a ‘rule follower’.  I have a hard time following a recipe…truth be told, the word ‘recipe’ to me means ‘inspiration’.  My friends already know that I’ve cooked something they want to recreate, they should not to ask for specifics (measurements are for the weak!)  If you are looking for a ‘counting calories/fat content/carb content’ you may find yourself very frustrated with anything I add to this page BUT most of my ‘inspirations’ will have little prep work and will require as few items as possible-thrown together meals are my favorites!  I will try to add any links that I’ve pulled inspiration from and report what/how I’ve altered.
